Tasty sandwich wedges

These are great to make for family picnics, and your kids will love adding the fillings

* Serves 4

What do I need?

For the basic sandwich:

  • 1 loaf of firm bread, such as ciabatta (available from supermarkets)
  • olive oil

For filling 1:

  • 2 packs mozzarella cheese (or any cheese you like), cut into slices
  • 4 slices ham
  • 4 tomatoes, sliced thinly
  • 4 tbsp Branston Pickle

For filling 2:

  • 2 cans tuna in brine, drained
  • 4 tomatoes, sliced thinly
  • 1 green pepper, deseeded and thinly sliced
  • pickled gherkins or pickled onions (optional)
  • 4 tbsp red kidney beans or olives (optional)

How do I make it?

  1. Slice the bread in half lengthways — you are making one huge sandwich. Scoop out some of the white soft bread filling and discard. Brush the slices with olive oil. 
  2. Get the kids to layer the fillings on the bottom slice. Cover with the top slice, then wrap in greaseproof paper or silver foil.
  3. Place some heavy books on top of the loaf and leave for 2 hours in a cool place. This will compress the loaf so it stays firmly together.
  4. When ready to serve, unwrap and slice into wedges. (Remember to pack a chopping board and knife in your picnic bag!)
