What do I need?
For the basic sandwich:
- 1 loaf of firm bread, such as ciabatta (available from supermarkets)
- olive oil
For filling 1:
- 2 packs mozzarella cheese (or any cheese you like), cut into slices
- 4 slices ham
- 4 tomatoes, sliced thinly
- 4 tbsp Branston Pickle
For filling 2:
- 2 cans tuna in brine, drained
- 4 tomatoes, sliced thinly
- 1 green pepper, deseeded and thinly sliced
- pickled gherkins or pickled onions (optional)
- 4 tbsp red kidney beans or olives (optional)
How do I make it?
- Slice the bread in half lengthways — you are making one huge sandwich. Scoop out some of the white soft bread filling and discard. Brush the slices with olive oil.
- Get the kids to layer the fillings on the bottom slice. Cover with the top slice, then wrap in greaseproof paper or silver foil.
- Place some heavy books on top of the loaf and leave for 2 hours in a cool place. This will compress the loaf so it stays firmly together.
- When ready to serve, unwrap and slice into wedges. (Remember to pack a chopping board and knife in your picnic bag!)
