Mozzarella & tomato parcels

These tasty parcels by nutritionist Nicola Graimes can be made the night before to save you time in the morning

Makes 2 parcels

Cost per person 30p

What do I need?

  • 1 tomato
  • 2 tbsp pesto
  • 2 large soft tortillas
  • 100g mozzarella, sliced
  • A little vegetable oil

How do I make it?

  1. Chop the tomato and remove the seeds. Spread a tablespoon of pesto in the centre of a tortilla and top with half of the mozzarella and the tomato.
  2. Fold in the sides of the tortilla to make a square parcel then repeat with the other tortilla.
  3. Brush the parcels with oil and put them, folded-side down, into a hot frying pan.
  4. Cook over a medium-low heat for two minutes on each side until tortillas are crisp and golden.
  5. Leave to cool before wrapping in napkins.

Tasty tip

A ball of mozzarella will be easier to slice if you pop it in the freezer for an hour before using.
