Apple flapjacks

These delicious flapjacks from nutritionist Nicola Graimes are sweet treats that contain ‘hidden’ fibre!

What do I need?

  • 175g butter
  • 8 tbsp golden syrup
  • 80g light soft brown sugar
  • 345g oats
  • 2 tbsp sunflower seeds
  • 1 large apple, grated

How do I make it? 

  1. Preheat the oven to 180°C/350°F/Gas 4. Line the bottom of a 23cm square tin with baking paper and grease the sides.
  2. Put the butter, syrup and sugar in a pan over a low heat and stir until butter has melted and sugar is dissolved. Increase heat and bring mixture to boil, then remove from hob.
  3. Put the oats, seeds and apple in a bowl, pour over the syrup mix and stir together with a wooden spoon.
  4. Put the mixture into the tin and level out with the spoon. Bake for 25 minutes until golden.
  5. Cut into 16 pieces and leave to cool in tin. Store in airtight container.
