Blueberry fool

A quick, delicious dessert that kids will find easy to make and which doubles as a breakfast

* Serves 4

 What do I need?

  • 200g blueberries (alternatively, soak 200g dried apricots overnight in water, and drain)
  • 150ml apple juice
  • 250g natural yogurt
  • ½ ripe banana, roughly chopped

How do I make it?

  1. Let your child put the blueberries (or apricots) and apple juice into a bowl and then you whizz it to a purée, using a hand-held stick blender.
  2. In another bowl, blend the yogurt and banana together until smooth.
  3. Let your child help you alternate layers of purée and yogurt into four tumblers. Using a skewer, they can then stir it slightly to create swirls.
  4. Keep the desserts chilled in the fridge until ready to serve.
