Sweet chilli turkey and peppers

Even small children will love this tasty, colourful dish with its hint of sweet and sour. For a change, make it with strips of chicken breast or lean pork

Sweet chilli turkey and peppers

What do I need?

  • 4 nests of noodles (such as medium egg thread noodles)
  • 100ml chicken or vegetable stock from a cube
  • 2 tsp cornflour 
  • 1 tbsp light soy sauce
  • 2 tbsp bottled sweet chilli dipping sauce
  • 2 tsp vinegar
  • 2 tbsp vegetable oil
  • 3 sweet bell peppers — 1 red, 1 yellow and 1 green, thinly sliced
  • 500g turkey thigh, diced

How do I make it?

  1. Cook the noodles according to pack instructions; drain and keep warm. While the noodles are cooking, whisk the next five ingredients together in a bowl.
  2. Heat half the oil in a wok or large frying pan and fry the peppers over a high heat, stirring constantly, for 2 minutes.
  3. Add the turkey and the rest of the oil, and stir for another 4 minutes, or until the turkey is cooked through with no pink bits and the peppers are soft.
  4. Tip the sauce mix into the pan and stir over a high heat until it thickens, then serve on the drained noodles.
