What you need
100g sugar (light, soft and brown) • 100g butter, softened • 1 egg, lightly beaten • 250g plain flour • 30g cornflour • ½tsp ground mixed spice • 1tsp ground cinnamon • 1 large star-shaped cookie cutter • 1 drinking straw • 1 small round cookie cutter, slightly bigger than the sweets • Fruit-flavoured hard-boiled sweets • 1 large baking tray, lined with greaseproof paper • Narrow ribbon
-
Step 1
Switch the oven on to 180°C/350°F/gas mark 4. Mix the sugar and butter in a bowl until smooth and creamy. Add the beaten egg a little at a time. Sift the flour, cornflour, mixed spice and cinnamon into the bowl and mix it all until it forms a dough. Dust flour over a surface and roll out the dough to ½cm thick.
-
Step 2
Use the star-shaped cutter to cut out stars in the dough, then use a spatula to lift the stars onto the baking tray. Using the straw, press a hole in one point of each star for the ribbon.
-
Step 3
Use the round cutter to cut a hole in the centre of each star. Squeeze together all the leftover bits of dough, and repeat until all the dough is used. Put the cookies in the oven for 5 minutes.
-
Step 4
Remove cookies from the oven and place a sweet in the centre of each. Return to the oven for 5 minutes until they have browned nicely and the sweets have melted. Take the cookies out and leave them to cool. Once cooled, thread a length of narrow ribbon through the hole in each one to hang it up.
