Makes 12-15 depending on size of cutter
Cost per biscuit: 18p
What do I need?
- 215g plain flour, plus extra for rolling
- 1 tsp baking powder
- Pinch of salt
- 1 tsp ground cinnamon
- 140g unsalted butter, cut into small pieces
- 115g soft light brown sugar
- 1 egg yolk
- An animal-shaped cookie cutter
- Tubes of writing icing to decorate (available from most supermarkets)
How do I make it?
- Preheat the oven to 180°C/350°F/gas mark 4 and grease two baking trays. Measure out the flour, baking powder, salt and cinnamon and let your child sift into a bowl and mix well.
- Now rub in the butter using your fingertips until the mix looks like fine breadcrumbs. Next, stir in the sugar and egg yolk with a fork, using your hands to make a soft dough — your child could help knead it.
- Roll dough on a lightly floured surface until 5mm thick. Let your child use an animal-shaped cutter to make 12-15 biscuits. Place on the baking sheets and bake for 15-20 minutes until light golden. Leave biscuits to cool, then move to a wire rack.
- Your child can now help decorate the biscuits with writing icing by drawing on eyes, nose, ears and whiskers. Alternatively, you could make your own lemon icing by mixing 200g icing sugar, 1 tbsp lemon juice and 1 tbsp water.
